Paleo alternatives are no doubt superior on every level. While paleo-friendly options are typically loaded with excess calories - finding the right balance with the nutrient composition. Still, these low-carb alternatives are heavy in almond and coconut flour, but also the oils are super hyper-palatable and energy-dense.
However, walnuts are a great ingredient in influencing hunger/satiety signals. Walnuts have a beneficial effect on the bacteria in our digestive tract, acting as a prebiotic.

These cookies are fudgy and indulgent and served on a pretty platter or stored in the fridge over three days for plenty of ‘treat’ moments for yourself or with loved ones! Walnuts have an excellent rich and sweet taste, and I have always felt they are the perfect seasonal nut as the festive season approaches!!

I enjoyed mine with a cup of coffee and savored every mouthful! You might like to drizzle dark chocolate over the cookies, add an espresso shot for a coffee walnut flavor cookie, or create a ‘sandwich’ with them using a berry chia jam- why not?!
I love the protein, amino acid boost of collagen in these cookies and how easy they are to make!! As an alternative to the powdered sweetener, you may like to use half natural sweetener with half honey if you can tolerate it!

Keto Walnut Cookie Ingredients
360g of coarsely ground organic walnuts. I have bought walnuts pre-opened in a pack and ground them down in a blender. *
2 medium pasture-raised eggs
2 heaped tablespoons of powdered erythritol with stevia sweetener
2 tsp cinnamon
2 tbsp bovine collagen powder or substitute for marine
1 tbsp walnut oil (or substitute with grass fed butter/ macadamia/avocado oil) to grease the baking sheet and form cookies.
How to make Keto Walnut Cookies
Preheat oven to 180 fan
Beat the egg sweetener and cinnamon
Add ground walnuts and form a dough by hand. (This is so satisfying!)
Form cookies. This can be pretty tricky as the mixture is quite sticky. The easiest way I found to do it was to create a ball with my hands and place it on the baking sheet. Place the back of your tablespoon into your oil, pat the ball down, and smooth out into a cookie shape.
Bake for 10 minutes or until nicely browned.
*If you want to soak and sprout your walnuts then you can. I personally do not think it’s necessary in the grand scheme of things.
