Stuffed Bell Peppers with Turkey Recipe

These stuffed bell peppers are among the most comforting dishes, perfect for a midweek meal for the family, a hearty Sunday lunch, or a side-to-a-family-style dinner.

Paleo Stuffed Bell Peppers

Stuffed peppers can be filled with anything you like, feta veggies, or a Mexican spiced ground mix, but here I have chosen delicious Turkey stuffed peppers.

You can use either the breast or the thigh. I prefer the thigh for more flavor and also for the fat-soluble nutrients.

There are various versions of stuffed bell peppers. Whether that’s with breadcrumbs or rice or beans or just pure meat.

Our version is gluten-free and low carb keeping it lighter but nutrient dense with a decent protein serving.

If you have any digestive issues then bell peppers might cause mild discomfort due to the lectins it contains. There are no real alternatives but a way around it could be removing the outer skin after baking.

I adore Turkey- full of tryptophan for good sleep as well as mood-boosting benefits! I am a massive fan of pasture-raised, free-roaming turkey more so than chicken.

Additionally, you can use any ground meat. Do what you have avaliable.

 
 

Turkey Stuffed Bell Pepper Recipe

Turkey Stuffed Bell Pepper Ingredients

  • 4 red bell peppers, seeded. Keep the tops and roast with the bottoms at the same time. They look beautiful when placed back on at the end to finish.

  • 300 grams ground turkey thigh

  • 1 tbsp ghee (or substitute for butter, coconut oil, olive oil or avocado oil)

  • 1 small onion, chopped

  • 2 plum tomatoes - diced seeds removed

  • 1 jalapeño (optional, add if you like a little heat)

  • 300g - courgette/zucchini - Thinly slice into coins. (I am using baby courgette)

  • 3 - 4 minced garlic cloves, minced.

  • 1.4 tsp of Icelandic sea salt.

Turkey Stuffed Bell Pepper Recipe:

  1. Preheat the oven at 180 fans for 30min.

  2. Heat ghee in the skillet, cook onion, jalapeño, and garlic until tender.

  3. Add the courgette and cook through, making sure to stir occasionally. Add the chopped tomato. Return turkey to the pan, season, and mix all together.

  4. Stuff the bell peppers with the mixtures and place in the preheated oven for 30 minutes.

  5. Optional topping: You can ad parmesan cheese on the top for the last few minutes.


What to serve with stuffed bell peppers

  • A light green salad of watercress, arugula, or pea shoots with feta cheese, sun-dried tomatoes, and olives.

  • Guacamole or a paleo-style coleslaw.
