How to make double choc chip cookies
Here I have used creamy cashew butter, which is rich in protein, calcium, and iron, alongside organic cacao powder, rich in flavonoids helping to protect your cells from oxidative stress. Not a big fan of cashew butter, then opt for almond butter instead. Additionally, if you want fewer nuts, you can combine coconut butter with the nut butter of your choice.
The dark chocolate chips are an excellent addition to further add to the delicious taste. These cookies would also be delicious with the addition of walnuts, macadamia nuts, or desiccated coconut.
To boost your antioxidant intake, serve these chewy double choc chip cookies alongside fresh berries such as strawberries, raspberries, or blackberries. Additionally, serve alongside raw or full-fat cream or coconut milk yogurt.

Double Chocolate Chip Cookie Ingredients
1 cup cashew butter (ideally organic)
2/3 cup erythritol
2 pasture-raised eggs
2 tbsp organic cacao powder
1/4 cup dark chocolate chips
1 tbsp grass-fed butter, melted
2 tbsps water
1 1/2 tbsp vanilla extract
1 tsp baking powder
Steps:
Preheat oven to 180C.
In a large bowl add the cashew butter, erythritol, eggs, cacao powder, melted butter, water, vanilla, and baking powder and stir to combine until the mixture forms a thick dough.
Add the chocolate chips and use a spatula to fold in.
Use your hands to form 7-9 2-inch cookie balls.
Bake in the center of the oven on a parchment paper-lined baking tray for 8 mins.
Once baked set aside to cool on a wire rack before enjoying.
